So there are times when the perfect cookie and a cup of tea is just what you need. Something sweet with something hot! These Easy Gluten Free Vanilla and Almond Cookies are just perfect! Yes...I know that is a big expectation...the perfect cookie!
They are the perfect cookie if you love the soft, sweet type that just has that little touch of crispness on the outside, the softness in the centre and the sweetness all around!
These cookies are easy to make and bake and they can be stored in an airtight container and (even though they are gluten free) are still great days later...if there are any left!
The tips to Gluten Free Vanilla and Almond Cookie recipe!
The first tip to this recipe is when dusting the cookies with powdered sugar (icing sugar) make sure you dust them as soon as they come out of the oven and this way to powdered sugar will stick to the cookie and give it a sweet coating.
The second tip is when dusting the powdered sugar is to use a loose tea leaf strainer or Mesh Tea Ball Infuser
They are usually used for clasping some loose tea leaves and adding it to a cup of hot water....but using it to dust the sugar makes it easier and gives a fine mist of sugar over the cookies...(and it is lots of fun! 🙂 )
Ingredients for Easy Gluten Free Vanilla and Almond Cookies
- 1 cup of butter (at room temp)
- 1 cup of sugar
- 2 eggs
- 1 ½ cups of gluten free flour (I use Orgran gluten free plain flour)
- 2 cups of almond meal
- 2 teaspoons of vanilla
- ½ cup of icing sugar (powdered sugar) for dusting
How to make Gluten Free Vanilla and Almond Cookies!
- Preheat the oven to 180º degrees Celsius
- Using an electric mixer, cream the butter and sugar and then slowly add in the eggs and vanilla and mix.
- Add in the gluten free flour and almond meal and using a wooden spoon, stir to combine. (just a tip - the dough will be soft)
- Place in the fridge of an hour or two or until the mixture becomes firmer and the butter sets. This makes it easier to roll into teaspoon size balls.
- Place the teaspoon sized balls onto a baking tray lined with baking paper and bake in the oven for 20 mins.
- As soon as they come out the oven, dust with icing sugar (this way the icing sugar will set on top of the cookie!) Make sure you space them apart as the cookies will spread.

- As soon as they come out the oven dust with icing sugar (this way the icing sugar will set on top of the cookie)
